* 3 lb. pork loin roast
* 2 tsp. olive oil
* 1 Tbsp. black pepper
* 1 tsp. ground nutmeg
* 1 tsp. ground cinnamon
1. Blend oil, pepper, nutmeg and cinnamon in small bowl. Brush mixture evenly onto roast. Place pork in shallow pan; roast in 350°F oven for 1 hr. (20 min. per pound) or until internal temperature on a thermometer reads 145°F.
2. Remove roast from oven; let rest about 10 min. before slicing.
