* 6 pork loin chops, 1-1/2-inl thick
* 2 tsp. butter
* 2 tsp. olive oil
* 1 c. dried apricots
* 3/4 c. golden raisins
* 1/2 c. slivered almonds
* 3 c. orange juice
* 1 tsp. fresh ginger root, grated
* 1/2 tsp. ground cinnamon
* 1/2 tsp. ground nutmeg
* 1/2 tsp. ground allspice
Almond Rice:
* 2 tsp. olive oil
* 1/2 c. almonds, slivered
* 1 Tbsp. almond liqueur
* 2 c. rice, cooked
* 1/4 c. green onions, minced
1. In a large heavy skillet, melt butter with olive oil over medium-high heat and brown chops on both sides.
2. Remove chops to a deep casserole with a lid, mix together all other ingredients and add to casserole. Cover and bake in a 350°F oven for 45 min. until pork is tender and the internal temperature on a thermometer reads 160°F. Serve chops with the fruited pan juices, if desired.

Almond Rice:
1. Heat oil in skillet; add almonds and sauté just until golden. Add liqueur and rice to skillet. Stir until heated. Add onions; stir to mix well.
