Tamarind and Lime Stir-fry Scallops

| 1 lb. queen scallops* |
| 1-1/2 oz. 'ready to cook' fresh noodles |
| 2 tsp. olive oil |
| 1 garlic clove, crushed |
| 12 oz. oriental stir-fry vegetable pack |
| 3-1/2 oz. snow peas, halved |
| 10-1/2 oz. tamarind and lime stir fry sauce |

| You may substitute smaller sea scallops for this variety, |
Directions:
1. Cook noodles in boiling salted water for 3 - 4 min.
2. Heat the olive oil in a large frying pan or wok. Add the garlic and scallops. Stir continuously for 3 min.
3. Add the stir fry vegetables and snow peas. Stir frequently.
4. Drain noodles and add to pan. Stir thoroughly. Pour in the sauce and heat for 2-3 min. until piping hot. Serve immediately.
